【Restaurant】Kitano Finds Japan Vol.1

“Kitano Finds Japan” is a new project that begins in April, highlighting food products from various regions of Japan, where nature and people work hand in hand to nurture them. The theme of the first issue will be “Hiroshima.” Executive Chef Takeshi Kamo’s hometown is also a treasure trove of ingredients, which will be introduced through the menus of each restaurant in the hotel.
Period: Tuesday, April 1, 2025 – Saturday, May 31, 2025
Main dining “LʼOrangerie Koh-an”
Roti of Onomichi wild boar and green asparagus with deep-fried gnocchi and chives sauce 3,900 yen
Focus ingredient: Mr. Murakami’s wild boar meat
Female wild boars are nourished after the new year. It is a rare ingredient that is caught in a natural way without using traps, and is delivered directly from the master in an exquisitely matured state according to the individual’s condition. The asparagus, grown in the same area, is served with potato gnocchi and a spring chive sauce. The dish can be enjoyed a la carte or as a course.

Hiroshima Oyster Gozen-set with Setouchi Lemon Tartar Sauce 2,500 yen
Focus ingredient: Oysters from Hiroshima Bay
In contrast to their small shells, these oysters are thick and rich in flavor. The oysters are nurtured in the bay, where rich minerals from the mountains flow in, and the tides are gentle and moderate, giving them a flavor that is a direct reflection of the land. The tartar sauce made with plenty of Setouchi lemons adds acidity and just the right amount of bitterness, creating a lightness to the dish.

Infused whiskey and homemade honey ginger syrup, with lemon juice as the star ingredient. Drizzling the optional Lagavulin (Islay Whiskey) will give you another lemon flavor that is more than just a refreshing drink.
